Mother’s Day is tomorrow! Happy Mother’s Day, friends!
This day is always special to me. Every year, I am reminded of the great privilege of being a mom – especially now that I have grandchildren to spoil! Our children are such a blessing to us every day of the year; it’s a tremendous honor to be called Mom.
As I look back on Sunday Supper and how it came to be, I realize that it would have never happened if I hadn’t been a mom. Our lives were so busy when our kids were little, with four schedules, Friday and Saturday football games, and after-school sports, that Sunday became our special day as a family.
We committed to sitting around our family table for our Sunday dinners, and it seemed like the world would slow down a bit on those days. We talked more, and as the kids grew older, we cherished these days more and more. When our oldest, Alexandra, left for college, I asked her what she would miss the most from home. Her answer profoundly affected me, inspiring me to start Sunday Supper the next day. “I can’t imagine not being home on Sunday.”
And so it began! I had no idea what was ahead for me. At the time, I thought I would start a blog just so my children would have recipes to reference when they wanted to look up a treasured family favorite.
Who remembers when my blog had ratings from all four of my children? I miss those days!
My kids will always want to make their favorite weeknight supper of pink pasta with sausage, and I’m sure they couldn’t imagine a vacation without a big batch of slow cooker pulled pork!
We love this recipe so much because it is an easy and economical choice, but also because just one large batch of it can make you all kinds of amazing dishes:
- Pulled Pork Nachos
- Pulled Pork Pizza
- Pulled Pork Quesadillas
- Pulled Pork Burritos
- And, wait for it… my all-time favorite, Pulled Pork Poutine!
I tell you, this recipe is a true miracle and a blessing for every busy mom. No one ever gets bored with it, and it creates so many memories!
Thank you for your support over the last 12 years. I am so grateful for you being here – especially for many of you, who have enjoyed my recipes for years! You’ve inspired me just as much as my children have, and without your support and encouragement, I would never have lived this dream of sharing my love for cooking and family time spent around the dinner table with others.
This Mother’s Day, I am grateful for so much inspiration. It started with my children, but it has turned into so much more because of you!
May your Mother’s Day be a special one filled with love and inspiration!
