Preheat oven to 350˚F. Season beef with salt and pepper.
Heat butter and oil in a pan and sear beef until golden brown. Remove and set aside.
Add onion, garlic, carrots, celery, potatoes, rosemary to the pan. Allow to cook. Stir in the tomato paste.
Deglaze pan with red wine, and cook for another 2-3 minutes.
Place beef back in the pan, add beef stock and bay leaves.
Cover and cook in the oven for 5-6 hours. Serve hot with sides of your desire. Enjoy!
