I’ve given plenty of loaded baked potato recipes a try, but these loaded baked potatoes wrapped in bacon are by far the best. The combination of crispy bacon and a soft potato stuffed with cheese, sour cream, and onions is unbeatable!

🍽 What do I need to make potatoes wrapped in bacon?
To make this loaded baked potato recipe, you will need the following:
- Toothpicks
- Knife
- Baking sheet with a rack
- Your oven
I use toothpicks to hold the bacon into place while baking the potatoes. Bacon shrinks as it cooks, so you want to make sure you have it held into place nicely on the potatoes to keep it in shape.

You will need the following simple ingredients in front of you to make these bacon-wrapped potatoes:
- Russet potatoes
- Bacon, not thick-cut
- Shredded sharp cheddar cheese
- Sliced green onions
- Butter
And that’s it! You can also use other baked potato toppings if you prefer – these are just staple ingredients for making loaded baked potatoes.

When it comes to loading potatoes, you can really top them however you like. I like to top mine with cheddar cheese, green onions, and, of course, butter!

Chives and other fresh herbs are great for topping potatoes, too! I also love baked potatoes and bacon with blue cheese dressing. The possibilities are endless!
🥔 How to Make Loaded Baked Potatoes Wrapped in Bacon
- Preheat your oven to 350°F. Scrub and rinse russet potatoes, then dry thoroughly. Wrap each potato with 1-2 slices of bacon, overlapping the slices. Remember, the bacon will shrink as it bakes.
- Poke a few toothpicks through the bacon and into the potato to hold the bacon in place. Repeat for all of your potatoes, then space them out on a wire rack over a baking sheet.
- Bake potatoes for 55-60 minutes. The potatoes should come out tender and fluffy on the inside, with crispy bacon on the outside. Remove the potatoes from the oven and allow them to cool for 10 minutes until they’re cool enough to handle. Once cool, remove the toothpicks.
- Cut a slit at the top of each potato and push on the ends to open them up.
- Fill with butter, shredded cheddar cheese, sliced green onions, and sour cream to taste. Serve, and enjoy!

If you bake them too long, they’ll get dry, so check them at the 55 minute mark just in case your oven runs a little hotter.

Loaded Baked Potatoes Wrapped in Bacon

- 4 russet potatoes
- 8 slices bacon not thick-cut – about 1-2 slices per potato
For loading the potatoes
- 8 oz. extra sharp cheddar cheese
- 1 cup sour cream
- 2-3 green onions sliced
- 4 Tbsp. butter
Instructions
- Preheat your oven to 350°F. Scrub and rinse 4 russet potatoes, then dry thoroughly.

Just kidding.
I have serious problems with baking a potato, I know, it’s easy but somehow it’s just one of those things I manage to mess up every single time! I’d definitely give it another go to try these pigskins.

Been making bacon-wrapped spuds for years. Don’t need toothpicks. When wrapped in a spiral, stretched slightly, firmly pressed to the skin and barely overlapping, bacon just shrinks tight around the spud. Use regular bacon, as thick cut wants to pull away.
I also make sure to cut into spud about 1/4″ in several places before wrapping. Bake on a rack over a drip pan. Can sprinkle herbs and/or cracked pepper on bacon before wrapping.
Having spuds fairly uniform in size helps them finish at the same time. 375 degrees F. Use cake tester to make sure spuds are done. Anywhere from 50-175 minutes for approximately 4″ spuds.
