Why You’ll Love My Filet Mignon Recipe
It’s totally foolproof!
What’s so magical about air frying is how easy it is to cook the perfect steak without any guesswork. There’s no fussing with knowing when and how often to flip or achieving that perfect sear. The convection force of the air fryer does it all for you!
Cleanup is a breeze!
I love steak, but I can’t say that I love cleaning up after it. The oil spatters everywhere, and I need to wipe down just about every surface in the kitchen afterwards! But in the air fryer, all I need to clean up is the air fryer basket. Just a quick scrub with soapy water and you’re done!
It works for any cut!
This recipe calls for filet mignon, but you can use pretty much any cut of steak! Just make sure that if the cut is more tough, such as a sirloin, chuck steak, or flank steak, that you marinate the steak or tenderize it first. Check out my guide on how to tenderize steak to ensure the perfect steak every time!
Filet Mignon Air Fryer Ingredients
- Filet mignon: Naturally, this recipe is for filet mignon, which is an extremely tender and lean cut of beef. Filet mignon is packed with protein and has very little fat content, meaning it’s ultra tender but can overcook quickly. That makes it perfect for the fast-cooking air fryer!
- Steak Seasoning: I swear by my homemade steak seasoning, but if you have a favorite mix, go for it! Alternatively, you can keep it simple with just salt and pepper.
- Garlic Herb butter: Fresh garlic, parsley, and salted butter come together into the most delicious compound butter for steak you’ll ever try. Don’t serve filet mignon without it; the lean meat needs the extra fat to bring out the flavor.
- Olive oil: A little olive oil helps the meat crisp up for that perfect crust!
- Fresh parsley for garnish (optional)
Using Other Steak Cuts
If you want to use a more budget-friendly cut of steak, I recommend marinating it overnight with a liquid marinade. You can find my steak marinade recipes paired with my best steak recipes, like Chuck Steak or London Broil.
How to Cook Filet Mignon in an Air Fryer
- Pat each steak down with paper towels, and mix the seasoning in a small bowl. Then season steaks on each side with steak seasoning. Pat down seasoning, add steaks to a covered plate, and marinate for 2 hours overnight in the refrigerator. This step lets the seasonings start to melt into the steak!
- After marinating, brush both sides of the steak with olive oil. Then let the steaks come to room temperature on the counter for approximately 20 minutes. Don’t skip this, or the steaks won’t cook evenly.
- Preheat the air fryer to 390°F. Place the steaks on the air fryer rack or in the basket, and cook for 4 minutes at 390°F.
- Flip, and cook for another 4 minutes. Remove and top with garlic butter sauce and let rest 10 minutes before slicing and serving. Remember to let the steak rest; cutting it too early leaves it dry and potentially under-cooked!

Air Fryer Filet Mignon Recipe Tips
- Always let your steak rest! Steak needs ten minutes of rest time after being cooked to fully come to temperature, during which time the fibers will release liquid and then soak it right back up. If you slice the steak too early, it will release the liquid and not soak it up, leading to tough, dry steak.
- Slice against the grain using a sharp knife for the most tender steak. Slicing with the grain means each muscle fiber will be filly intact, making it super tough to chew.
- Measure the degrees of doneness using a meat thermometer and use my Steak Temperature Chart to cook to your perfect doneness. Four minutes on each side will produce medium rare filet mignon (so long as they are the same size as the recipe calls for). You cannot eyeball steak doneness!
- You can also use beef tenderloin in this recipe!

FAQ
Ultimately, how long it takes to cook steak in the air fryer depends on two factors: the thickness of your steak and your desired degree of doneness. For two 6-ounce filet mignon steaks cooked medium rare (135°F), it takes about 4 minutes on each side at 390°F. If you’d prefer yours a little more done, use a meat thermometer to measure doneness and add a minute to the cooking time as necessary.
Steak in the air fryer is more than just a time-saver: it creates a delicious, perfectly cooked steak with a nice crust. Air fryers are essentially small convection ovens, so they’re great for cooking steak all of the way through to your preferred doneness while “searing” it on the outside.
You should flip the steak in the air fryer halfway through the total cooking time for the best results. So, for this recipe, flip at the 4-minute mark, then cook another 4 minutes.
