Wow, what a week! I am exhausted in the most special way and filled with so much love. There is nothing better than when we are all together, and that’s exactly what we did. My house was filled with noise, laughter, and a little chaos — and it brought me right back to the days when the kids were young and our home was always buzzing with activity.

This weekend, we had so much to celebrate: Reis’s birthday and our 34th wedding anniversary. It’s so hard to believe — it feels like just yesterday, and at the same time, like a lifetime filled with memories. I couldn’t imagine life without my big family and all the laughs we’ve shared over the years.

To kick off the weekend, I made a big batch of pulled pork, and it was a huge hit! I can’t tell you how much easier it made things knowing I had a dish ready that everyone loves. We officially started our celebration with a brunch that was nothing short of perfect — mimosas flowing, my classic sausage casserole, French toast casserole, a new favorite keto spinach and sausage casserole, and of course, my candied bacon (because it just wouldn’t be brunch without it!).

We laughed, we celebrated, and most importantly, we made more amazing memories that I know we’ll carry with us forever. Moments like these remind me why Sunday Supper means so much — it’s about gathering, sharing food, and cherishing the time we have together.

- Sunday: Slow Cooker Pulled Pork (or Instant Pot)
- Monday: Pulled Pork Rice Bowls
- Tuesday: Pulled Pork Pizza
- Wednesday: Loaded Pulled Pork Nachos
- Thursday: Pulled Pork Poutine
- Friday: Pulled Pork Quesadillas
- Saturday: Pulled Pork Sandwich
🔪 Prep Plan:
On your prep day, cook your big batch of pulled pork in the slow cooker or Instant Pot! Once cooked and cooled, shred the pork and portion it out for all of this week's meals. Store each portion in an airtight container in the fridge.
While the pork is cooking, prep your toppings!
- Chop onions, peppers, and green onions for nachos, rice bowls, and quesadillas.
- Shred cheese and portion it out for pizza, nachos, poutine, quesadillas, and sandwiches.
- Wash and chop any salad greens or veggies you want to serve on the side.
