If you’ve been keeping up with my life, you know I can’t go on vacation without making a big pot of pulled pork. It’s the perfect protein to start off a weak off easy meals!
As an Instant Pot or Slow Cooker recipe, my pulled pork is hands-off, so you can prep it over the weekend and enjoy a week’s worth of pulled pork dinner ideas. You’ll never run out of delicious ways to turn it into easy weeknight meals!
It’s a miracle food: whether you’re in the mood for sandwiches, tacos, nachos, or a simple rice bowl, you can’t go wrong with these leftover pulled pork ideas. The best part is, they use such simple ingredients that you can easily swap things around to make something new the next day.

How to Make Pulled Pork
Start off by prepping your pulled pork. You can make it a variety of ways, but my favorite ways are in the Instant Pot or Slow Cooker. I’ve linked both below! Either way, you can use either Boston Butt or bone-in pork shoulder; both are great cuts for pulled pork. Flavor it with your favorite BBQ sauce (I recommend sweet BBQ or vinegar barbecue sauce), set it to cook, and you’re all set!

Dinner Ideas with Pulled Pork
My favorite thing about these recipes is that, for the most part, they all use the same ingredients. Take some black beans, sour cream, cheese, rice, and tomatoes, and you can make so many delicious lunches and dinners but can keep your grocery list simple!

BBQ pork sandwiches are a classic, as well as delicious pork pizza flatbreads, rice bowls, and more! You can make good use of tender pulled pork in so many ways, I often run out of pork before I run out of ideas.
What to Serve With Pulled Pork
Of course, pulled pork is often made so much better by having the right host of sides! My favorite is naturally a big batch of homemade coleslaw, which pairs perfectly with just about everything pulled pork. But I also love making up a big pot of chili to add pulled pork into for pork chili, or macaroni for BBQ pork mac and cheese!
Tips for Leftover Pulled Pork
- Good pulled pork meals rely on starting with the best pulled pork! Make sure to check out my recipes, and try my Pulled Pork Spices – a homemade blend packed with flavor!
- Pulled pork lasts 3-4 days in the fridge. Make sure to freeze it so you can make the most of every last little bit! See more of my Meals that Freeze Well.
- If you like to play with a variety of flavors, make your pulled pork with only seasonings and chicken broth, instead of BBQ sauce. Then you can add whatever sauce you like to each dish.
Storing Leftover Pulled Pork
The secret to having lots of great meals from pulled pork is storing it so it lasts all week! Remember, pulled pork only lasts 4 days in the fridge. Because of this, you’ll want to freeze it in portion-sized containers and thaw it for each recipe. Be sure to let it cool first before freezing so you don’t lower the temperature of your freezer, and leave a gap at the top of the container to account for the liquid expanding when it freezes.
Leftover BBQ Pulled Pork Recipes FAQ
Due to its soft, tender texture and tangy flavor, pulled pork pairs well with crunchy ingredients like coleslaw, chips, and lettuce, as well as softer ingredients like cheese and buns that play into the tenderness!
My favorite way to meal prep pulled pork is by storing it in portion-sized freezer safe containers or plastic bags. The portions can then easily be thawed in the fridge the night before, or in a cold water bath shortly before cooking. This keeps the pork fresh, and keeps you from thawing too much at once.
