My favorite part about sous vide cooking is that it requires very little effort. Making beef tenderloin sous vide is so easy, and the results will blow you away.
It comes out so tender and juicy! And, after reverse searing in a skillet for that perfect exterior, it really is the perfect beef tenderloin recipe. I can guarantee you will love it.
What is sous vide?
Sous vide refers to cooking vacuum-sealed food in a water bath. It’s the perfect technique for cooking food exactly to your desired degree of doneness with very little effort involved. Sous vide cooking is frequently used in the best restaurants, but you can easily do it at home!
Water bath cooking is done using a sous vide cooker, also known as a precision cooker or immersion cooker.
It’s easy: all you do is attach your sous vide machine to a pot of water, select the time and temperature you need, and place your sealed food into the pot of water to cook. You can seal food in a regular zip-lock bag.
Sous Vide Tools
To get started with cooking tenderloin sous vide, you will need the following tools:
- Sous vide cooker
- Large pot of water
- Large zip-lock bag
- Small bowl to mix seasoning
- Skillet for searing
If you don’t already own a sous vide machine or want to give one as a gift this holiday season, here are a couple of great choices:
Ingredients
- Beef tenderloin
- Butter
- Garlic
I use either a 2 ½ lb. or 3 lb. beef tenderloin. This is enough to feed at least 6 people, so it’s perfect for feeding a family of 4 with leftovers as a special Sunday dinner or to serve as a holiday dinner.
After cooking the tenderloin sous vide, I reverse sear it in a pan with garlic butter sauce. This gives it a nice sear and so much flavor! I love serving this dish with creamy horseradish sauce.
Beef Tenderloin Seasoning
- Rosemary (dried and fresh)
- Garlic powder
- Sea salt
- Pepper
Simple is best for seasoning beef tenderloin. I like to use a mix of rosemary, garlic powder, sea salt and pepper.
You can also try Santa Maria seasoning like we use in our Grilled Picanha Steak or my favorite Best Dry Rub for Steak, if you want to mix things up!
Sauces for Beef Tenderloin
The garlic butter sauce in this recipe is perfect, but if you’re like me, then a dipping sauce makes any roast even better!
My favorite sauces for dipping are:
- Au Jus
- Creamy Parmesan Sauce
- Easy Cheese Sauce
- Creamy Garlic Sauce
How to Cook Beef Tenderloin Sous Vide
- Combine rosemary, garlic powder, sea salt, and pepper in a bowl. Generously coat your tenderloin with the seasoning, patting it down against the beef.
- Top the beef with a few sprigs of fresh rosemary, then seal it tightly inside of a zip-lock bag. Make sure you seal it tightly!
- Attach your sous vide machine to a pot of water and set the temperature to 140°F. Place your bag of tenderloin into the hot water and clip it to the side of the pot. Cook for 2 hours.
- Remove the tenderloin from the bag and place it on a plate to the side. Heat butter in a skillet over medium-high heat, then add minced garlic and cook for a few minutes. Then, add an extra few pinches of seasoning.
- Add your sous vide beef tenderloin to the skillet and sear on all sides until golden. Add the drippings from the sous vide bag to the pan with the roast. Spoon that delicious garlic butter all over the meat while you’re cooking! This is key to a delicious tenderloin!

Recipe Tips
- Make sure to seal the zip-lock bag tightly. You don’t want any water to get into the bag! This is very important.
- Clip your bag to the side of the pot when cooking sous vide. This will keep the bag in place and will help ensure no water gets into it.
- Spoon the garlic butter over the beef while you’re searing to coat it! This will make it extra juicy and tasty. This is key to cooking the perfect roast!

Sous Vide Beef Tenderloin Recipe
Equipment
- Sous vide cooker
- Large pot of water
- Large zip-lock bag
- Small bowl to mix seasoning
- Skillet for searing
Ingredients
- 3 lb. beef tenderloin or 2 ½ lbs.
- 1 serving rosemary sea salt mixture
- ½ stick butter
- 1 Tbsp. garlic minced
Instructions
- Generously coat your beef tenderloin with the rosemary salt seasoning, patting it down against the beef.
- Top the beef tenderloin with a few sprigs of fresh rosemary, then seal it tightly inside of a zip-lock bag. Make sure you seal it tightly!
- Attach your sous vide machine to a pot of water and set the temperature to 135°F for medium rare or 140 for medium. Place your bag of tenderloin into the hot water and clip it to the side of the pot. Cook for 2 hours.
- Remove the tenderloin from the bag and place it on a plate to the side. Heat butter in a skillet over medium-high heat, then add minced garlic and cook for a few minutes. Then, add an extra few pinches of seasoning.
